So from the user guide:

Removing File Stores
You must prepare the File Stores for deletion before removing them. To prepare File Stores for
deletion:
1. Remove all snapshots.
2. Remove all files and folders from the File Store, from the share of the root of the File Store.
3. Remove all shares.

AND

NOTE: Removing a File Share only removes access to files and folders. It does not physically
remove any files or folders.

To remove a File Share using the SSMC, follow these steps:
1. On the main menu in the SSMC, select File Persona > File Shares.
2. Select the File Share you want to delete, and then select the Actions menu.
3. Select Delete.
-----------------------------------------

So lets say I have an smb share which has files on it and I delete it from the SSMC. 3 months later I want to remove the file store. Of course I no longer know the path and the file store will tell me it can't be deleted because there is still data there.

So my question is a) how do I see what is still in the file store and b) how do I do the part in red?

I guess another question is can I from the 3PAR delete a share *and* all data on it?

I am having the same exact issue. Someone before me created and deleted shares but did not empty them. I cannot find a way to delete them. You cannot delete the file server or the store without emptying the "hidden" directories. How can we see what is on the store as you cannot export it directly?

From HPE communities:

Create a share on the File Store and leave the Subdirectory field blank. This will create a share at the root of the File Store. When you navigate to this share you will see what needs to be deleted.

I've had issues with permissions on the directories I wanted to delete. To fix this I create shares pointing to the directory to be deleted and used the setfshare command to grant myself permissions to delete.
